Scotch Shortbread

3/4 lb Butter
1/4 lb Sugar
1/2 lb Flour
1/4 lb Cornstarch

Knead sugar & butter with hands until well mixed; then knead in cornstarch & lastly the flour. The more time spent kneading the better the final product. Break off small pieces; press into flat circles; decorate with back of fork. Start baking in preheated 375 degree oven. Immediately reduce temperature to 300 & bake for 1 hour. True Scotch short bread improves with age.
