Potato Bread Gluten Free

Dry ingredients:
1 pk Dry yeast
2 c Gourmet blend flour
1/2 c Instant potato flakes
3 tb Non fat dry milk
2 ts Xanthan gum
1 ts Salt
1/2 ts Baking soda
2 tb Sugar

Wet ingredients:
3/4 c Ricotta cheese
2 tb Margarine; melted
2 Eggs; room temperature, Beaten
1 ts Vinegar
7/8 c Warm water

Mix all dry ingredients. Whisk to mix thoroughly. Transfer to machine. Combine and whisk all liquid ingredients. Transfer to machine. This is a very moist dinner bread. If you desire to reduce the moisture and make a larger loaf, increase the flour by 1/2 cup.
