Slavic Potato Bread

3/4 c Ricotta or cottage cheese
2 ts Active dry yeast
2 2/3 c Bread flour
3/4 ts Grated nutmeg
3/4 ts Salt
1/4 ts Cayenne
3/4 c Mashed potatoes
1 Whole egg
1 Egg yolk
1/3 c Water

Drain the cheese in a sieve lined with cheesecloth or a sturdy paper towel for 30 minutes. Discard the liquid.

Add all ingredients, including the drained cheese, in the order suggested by your bread machine manual and process on the bread cycle according to the manufacturer's directions.
